
Venison Stew with Pasta

Method
1.Skim the fat off the top of the chilled stew and bring to room temperature 1–2 hours before cooking.
2.Reheat the stew until piping hot.
3.Boil a large pan of water, add salt, and cook pasta until nearly done (leave a couple of minutes of cooking time).
4.Drain the pasta and combine quickly with the bubbling stew, ensuring the pasta is covered in liquid.
5.If the casserole pan is too small, mix in a separate warmed vessel.
6.In a bowl, combine crumbled feta with finely chopped oregano, parsley, or basil.
7.Ladle the stew into shallow bowls and serve with the herb-spiked cheese on the side for sprinkling.

Tips
The stew can be prepared 2–3 days in advance and stored in the fridge. Leftover stew with or without meat makes an excellent pasta sauce for the next day.
