
Roasted Salmon, Pesto & Lemon Ciabatta Crust

Ingredients
| 2 | oz | Ciabatta breadcrumbs |
| 1/2 | lemon(grated rind) | |
| 2 | tbsp | oil(olive oil) |
| Green pesto sauce | ||
| Salt and pepper | ||
| 4 | Salmon fillets(each weighing 6oz) | |
| 2 | oz | butter |
| 1/2 | lemon(juice and rind) | |
| 1 | carton | Waitrose crème fraîche |
Method
1.Mix breadcrumbs, lemon rind, olive oil + pesto. Add squeeze of lemon + season.
2.Put crumb mixture on top of each fillet on greased tray.
3.Roast 200°C for 10-15 mins.
4.Lemon sauce: Melt butter + whisk in lemon juice, rind + crème fraîche. Heat through + adjust seasoning.
5.Pour sauce onto plates – add fish.
