Roasted Salmon, Pesto & Lemon Ciabatta Crust

Ingredients

2ozCiabatta breadcrumbs
1/2lemon(grated rind)
2tbspoil(olive oil)
Green pesto sauce
Salt and pepper
4Salmon fillets(each weighing 6oz)
2ozbutter
1/2lemon(juice and rind)
1cartonWaitrose crème fraîche

Method

1.Mix breadcrumbs, lemon rind, olive oil + pesto. Add squeeze of lemon + season.
2.Put crumb mixture on top of each fillet on greased tray.
3.Roast 200°C for 10-15 mins.
4.Lemon sauce: Melt butter + whisk in lemon juice, rind + crème fraîche. Heat through + adjust seasoning.
5.Pour sauce onto plates – add fish.
