
Red Rice Salad with Barberries, Grilled Vegetables & Toasted Almonds

Ingredients
| 250 | g | red Camargue rice |
| 2 | handfuls | dried barberries(or use unsweetened dried sour cherries or cranberries) |
| 1 | red onion(finely diced) | |
| good-quality olive oil | ||
| sea salt | ||
| freshly ground black pepper | ||
| 1/2 | orange(juiced) | |
| 2 | tbsp | clear honey |
| 3 | tbsp | red wine vinegar |
| 1 | large courgette(sliced lengthways into 5mm (1/4in) thick strips) | |
| 1 | large aubergine(cut into 1cm (1/2in) thick round slices) | |
| 300 | g | roasted red peppers in oil(drained and roughly diced) |
| 2 | packets (20g each) | flat leaf parsley(leaves picked and finely chopped) |
| 1 | packet (20g) | coriander(leaves picked and finely chopped) |
| 100 | g | blanched whole almonds(toasted) |
Method
1.Cook the rice as per the packet instructions. Rinse well in cold water and drain.
2.Put the rice, barberries and onion in a large mixing bowl and add enough olive oil to coat the rice well, a generous seasoning of sea salt and black pepper, the orange juice, honey and vinegar. Set aside to allow the rice to sit and soak in all the flavours while you prepare the vegetables.
3.Preheat a griddle pan over a medium heat. Brush the slices of courgette with olive oil and grill them for 4–5 minutes, or until black griddle marks appear on each side. Transfer to a chopping board and set aside.
4.Brush the aubergine slices with a more generous coating of olive oil and grill them in the griddle pan for approximately 8 minutes on each side until the texture softens and they are cooked through. Remove from the pan to a chopping board and set aside.
5.Roughly chop the courgette and cut the aubergine slices into dice. Add to the rice along with the peppers, herbs and toasted almonds and give the ingredients a good stir before serving.
