
PROVENCAL PARTY CHICKEN

Ingredients
| 6 | small chicken breast fillets | |
| 2 | lemons(zested & juiced) | |
| 2 | tablespoons | paprika |
| 1 | garlic(crushed & chopped) | |
| 1 | bunch | tarragon |
| 2 | oz | butter |
| 1/2 | jar | sundried tomatoes(cut into strips) |
| 2 | skinned red peppers(cut into strips) | |
| 1/2 | pint | double cream |
| salt | ||
| 1 | bunch | parsley, flat leaf |
Method
1.Slice breasts into strips.
2.In a bowl mix lemon zest, juice, paprika, garlic, chopped tarragon and chicken strips, marinade for 1 hour.
3.Melt the butter in a saucepan, add chicken mixture and saute gently for 10 minutes.
4.Remove chicken pieces from the pan.
5.Increase the heat and reduce juices for 2 minutes.
6.Add double cream, peppers, sundried tomatoes and heat for 4 mins to thicken sauce.
7.Season with salt & pepper.
8.Return chicken to sauce and heat for 3 minutes.
9.Lastly add chopped flat leaf parsley.
