Gill's Provencal Chicken

Ingredients

6small chicken breast fillets
2lemons(zested & juiced)
2tablespoonspaprika
1garlic(crushed & chopped)
1bunchtarragon
2ozbutter
1/2jarsundried tomatoes(cut into strips)
2skinned red peppers(cut into strips)
1/2pintdouble cream
salt
1bunchflat leaf parsley

Method

1.Slice breasts into strips.
2.In a bowl mix lemon zest, juice, paprika, garlic, chopped tarragon and chicken strips, marinade for 1 hour.
3.Melt the butter in a saucepan, add chicken mixture and saute gently for 10 minutes.
4.Remove chicken pieces from the pan.
5.Increase the heat and reduce juices for 2 minutes.
6.Add double cream, peppers, sundried tomatoes and heat for 4 mins to thicken sauce.
7.Season with salt & pepper.
8.Return chicken to sauce and heat for 3 minutes.
9.Lastly add chopped flat leaf parsley.

Tips

This is delicious either hot or cold, and will keep warm for 1 hour without spoiling. Also it may be made in advance & reheated. DO NOT FREEZE.
