Proper Custard Sauce

Ingredients

10fl ozdouble or single cream(275 ml)
3egg yolks
1level teaspooncornflour
1level tablespooncaster sugar
2dropsvanilla essence

Method

1.Heat the cream in a small saucepan up to boiling point.
2.While the cream is heating, thoroughly blend the egg yolks, cornflour, sugar, and vanilla together in a small basin.
3.Pour the hot cream into the basin while stirring all the time.
4.Return the mixture to the saucepan and heat very gently while stirring until the sauce has thickened (this should take a minute or two).

Tips

If the sauce overheats and starts to look granular, remove it from the heat and continue to beat it; it will become smooth again as it cools.
