Peanut chilli oil

Ingredients

1/2cupsesame seeds
2cupshi-oleic peanut oil
1/2cuproasted peanuts(roughly chopped)
1/4cupchilli flakes
1teaspoonChinese five spice
2star anise
4spring onions(finely sliced)
1tablespoonginger(grated)
1tablespoongarlic(grated)
1tablespoonrice wine vinegar
2tablespoonssoy sauce
1tablespooncaster sugar
1/4cupsesame oil

Method

1.In a small saucepan over low-medium heat, add the sesame seeds and lightly toast. Add the peanut oil, roasted peanuts, chilli flakes, Chinese 5 spice, star anise, spring onions, ginger, garlic to a small saucepan. Bring gently to the boil and, once bubbling for a minute or two, add the vinegar, soy sauce and sugar.
2.Turn off heat and stir until sugar dissolves. Stir in the sesame oil and set aside to cool.
3.When cool, store in a clean jar.
