
Peanut chilli oil

Ingredients
| 1/2 | cup | sesame seeds |
| 2 | cups | hi-oleic peanut oil |
| 1/2 | cup | roasted peanuts(roughly chopped) |
| 1/4 | cup | chilli flakes |
| 1 | teaspoon | Chinese five spice |
| 2 | star anise | |
| 4 | spring onions(finely sliced) | |
| 1 | tablespoon | ginger(grated) |
| 1 | tablespoon | garlic(grated) |
| 1 | tablespoon | rice wine vinegar |
| 2 | tablespoons | soy sauce |
| 1 | tablespoon | caster sugar |
| 1/4 | cup | sesame oil |
Method
1.In a small saucepan over low-medium heat, add the sesame seeds and lightly toast. Add the peanut oil, roasted peanuts, chilli flakes, Chinese 5 spice, star anise, spring onions, ginger, garlic to a small saucepan. Bring gently to the boil and, once bubbling for a minute or two, add the vinegar, soy sauce and sugar.
2.Turn off heat and stir until sugar dissolves. Stir in the sesame oil and set aside to cool.
3.When cool, store in a clean jar.
