Ingredients

6egg whites
350gCaster sugar
Coulis(optional for serving)
Whipped cream(optional for serving)

Method

1.Preheat oven to gas mark 1 / 140°C.
2.Whisk egg whites until ripples occur and beginning to hold peaks, then whisk in the sugar, tablespoon at a time until you are left with a shiny meringue mixture with peaks.
3.Spoon onto a grease-proof papered tin (being generous) and whack into the oven for 45 minutes.
4.Be careful removing the meringues from the tray, for they shatter easily.
5.To serve: top with a dollop of cream and drizzle coulis on the top for a perfect, light desert.
