
Max & Tom's Chicken Satay

Ingredients
| 12 | chicken thigh fillets(1.3 kg) | |
| 1 | clove | garlic |
| 2 | tablesp. | mild sweet chilli sauce |
| 1 | tbsp. | peanut oil |
| 2 | tbsp. | coarsely chopped fresh coriander |
| 1 | cup | chicken stock(250 ml) |
| 1/2 | cup | crunchy peanut butter(130g) |
| 1/4 | cup | mild sweet chilli sauce(60g) |
| 1 | tbsp. | lemon juice |
Method
1.Combine the chicken, garlic, 2 tablespoons of sweet chilli sauce, peanut oil, and coriander. Marinade overnight.
2.For the sauce, combine chicken stock, peanut butter, 1/4 cup of sweet chilli sauce, and lemon juice in a saucepan.
3.Simmer for 3 minutes.
