Ingredients

12chicken thigh fillets(1.3 kg)
1clovegarlic
2tablesp.mild sweet chilli sauce
1tbsp.peanut oil
2tbsp.coarsely chopped fresh coriander
1cupchicken stock(250 ml)
1/2cupcrunchy peanut butter(130g)
1/4cupmild sweet chilli sauce(60g)
1tbsp.lemon juice

Method

1.Combine the chicken, garlic, 2 tablespoons of sweet chilli sauce, peanut oil, and coriander. Marinade overnight.
2.For the sauce, combine chicken stock, peanut butter, 1/4 cup of sweet chilli sauce, and lemon juice in a saucepan.
3.Simmer for 3 minutes.
