Kati's Banana Bread

Ingredients

185gsoftened butter
1 1/4cupscaster sugar(approx. 275g)
2teaspoonsvanilla essence
3eggs
1 1/4cupsmashed banana(approx. 3 1/2 bananas)
2 1/4cupsself raising flour(approx. 330g)
1/4teaspoonbicarbonate of soda
1/3cupmilk

Method

1.Preheat oven to 180 degrees (or 160 degrees for fan forced oven)
2.Grease and lightly flour a 8 cup bundt or loaf pan
3.Beat butter, sugar and vanilla in a small bowl using an electric mixer until lightly fluffy
4.Add eggs one at a time, beat until combined
5.Then beat in mashed banana
6.Transfer into a large bowl
7.Stir in sifted flour and bicarbonate soda
8.Stir in milk
9.Spread mixture into a prepared pan
10.Bake in oven for 40mins or until cooked when tested
11.Stand in cake pan for 10mins then turn onto a wire rack to cool
