
Grilled Coriander Honey Chicken

Ingredients
| 4 | lbs | chicken parts(legs and breasts) |
| 6 | tbs | soy sauce(90ml) |
| 1-2 | cloves | garlic(peeled and pulped) |
| 2 | tsp | fresh ginger(finely grated, peeled) |
| 1 | tbs | ground coriander seeds(15ml) |
| 1/4 | tsp | ground turmeric |
| 1/4 | tsp | cayenne pepper(more or less according to taste) |
| 1 | tbs | honey(15ml, suggest more) |
Method
1.Cut each whole chicken leg into 2 pieces and each breast into 4.
2.Cut two long parallel diagonal slits on each side of each leg piece. The slits should be deep enough to reach the bone but never start at an edge.
3.Cut similar slits on the meaty side of each breast.
4.In a large bowl combine the soy, garlic, ginger, coriander, cayenne and honey. Mix until smooth.
5.Put the chicken in the marinade and rub the marinade into all the pieces making sure it goes deep into slits.
6.Set aside for 1-2 hours, turning the pieces occasionally.
7.Preheat grill to medium-high.
8.Grill for 12-15 minutes each side until well browned (can be cooked on bbq).
