
Griddled Cabbage Wedges with Spiced Butter & Seeds

Ingredients
| 1 | green cabbage | |
| 250 | ml | vegetable stock |
| 75 | g | butter |
| 1/2 | tsp | ground cumin |
| A pinch | chilli powder | |
| A handful | chopped parsley | |
| 1 | tbsp | sunflower seeds(toasted) |
| 1 | tbsp | pumpkin seeds(toasted) |
| 2 | tbsp | dukkah |
Method
1.Quarter your cabbage. Rinse it. Set a large frying pan on a high heat. Add the cabbage quarters, cut-side down and char for 3 mins on each side till golden.
2.Pour in the stock and cook till the cabbage is tender, about 10 mins. Remove from the pan.
3.Boil any stock in the pan till it's reduced to about 2 tbsp. Add the butter, spices and a pinch of salt. Warm to melt the butter.
4.Pour the spiced butter over the cabbage wedges. Sprinkle with the parsley, the toasted seeds and dukkah to finish.
