
Granny's Farmhouse Fruitcake

Ingredients
| 4oz | 110g | margarine |
| 6oz | 170g | granulated sugar |
| 6oz | currants | |
| 6oz | sultanas | |
| 2oz | chopped peel(or 14oz (400g) mixed fruit total) | |
| 8oz | 225ml | cold strained tea |
| 1 | heaped tsp | mixed spice |
| 4oz | plain flour | |
| 4oz | self-raising flour | |
| 2 | standard | eggs |
Method
1.Put all the fruit, sugar, margarine, tea, and mixed spice into a large pan. Bring slowly to a boil and simmer for 1 minute. Allow to cool in the pan.
2.Light oven to 180°C (Gas 4, 350°F). Grease an 8" round or 7" square tin and line the bottom.
3.Sieve the plain flour and self-raising flour together.
4.Beat the 2 eggs together.
5.When the fruit mixture is warm to touch, add the beaten eggs and then the flours. Mix together and pour into the prepared tin.
6.Bake for approximately 1 1/4 hours. Cool in tin slightly before turning out.
