Ingredients
| 1 | pack | Dorset puff pastry |
| 3 | leeks | |
| 4 | onions | |
| 2 | packs | cherry tomatoes |
| basil(optional) | ||
| thyme(optional) | ||
| cheese(goats, mozzarella, or taleggio) |
Method
1.Roll out the puff pastry until a bit bigger.
2.Tip it upside down onto a tray lined with baking paper.
3.Sweat leeks and onions for 20-30 minutes on very low heat; they should not brown.
4.Place sweat leeks/onions on the pastry.
5.Add cherry tomatoes on top.
6.Add herbs and cheese.
7.Put in oven for 30 minutes at 200°F (Note: Pull paper onto a pre-heated hot tray).
