Fried Halloumi Cheese with Lime and Caper Vinaigrette

Ingredients

1halloumi cheese
2tablespoonsolive oil
2level tablespoonswell-seasoned flour
juice and zest 1 lime(for the dressing)
1heaped tablespooncapers, drained(for the dressing)
1tablespoonwhite wine vinegar(for the dressing)
1clovegarlic, finely chopped(for the dressing)
1heaped teaspoongrain mustard(for the dressing)
1level tablespoonchopped fresh coriander leaves(for the dressing)
2tablespoonsextra virgin olive oil(for the dressing)
salt and freshly milled black pepper(for the dressing)
fewsprigscoriander(to garnish)

Method

1.Unwrap the cheese and pat it dry with kitchen paper. Slice it into 8 slices, including the ends.
2.Prepare the dressing by whisking all the dressing ingredients together in a small mixing bowl.
3.Heat the olive oil in a frying pan over a medium heat.
4.When the oil is hot, press each slice of cheese into the seasoned flour to coat on both sides.
5.Add the slices to the hot pan. Cook for 1 minute on each side, or until they have a good golden colour.
6.Serve immediately on warmed plates with the dressing poured over and garnished with coriander.
