
Fried Halloumi Cheese with Lime and Caper Vinaigrette

Ingredients
| 1 | halloumi cheese | |
| 2 | tablespoons | olive oil |
| 2 | level tablespoons | well-seasoned flour |
| juice and zest 1 lime(for the dressing) | ||
| 1 | heaped tablespoon | capers, drained(for the dressing) |
| 1 | tablespoon | white wine vinegar(for the dressing) |
| 1 | clove | garlic, finely chopped(for the dressing) |
| 1 | heaped teaspoon | grain mustard(for the dressing) |
| 1 | level tablespoon | chopped fresh coriander leaves(for the dressing) |
| 2 | tablespoons | extra virgin olive oil(for the dressing) |
| salt and freshly milled black pepper(for the dressing) | ||
| few | sprigs | coriander(to garnish) |
Method
1.Unwrap the cheese and pat it dry with kitchen paper. Slice it into 8 slices, including the ends.
2.Prepare the dressing by whisking all the dressing ingredients together in a small mixing bowl.
3.Heat the olive oil in a frying pan over a medium heat.
4.When the oil is hot, press each slice of cheese into the seasoned flour to coat on both sides.
5.Add the slices to the hot pan. Cook for 1 minute on each side, or until they have a good golden colour.
6.Serve immediately on warmed plates with the dressing poured over and garnished with coriander.
