Cranks Nut Roast

Ingredients

1medonion
1ozbutter or marg
8ozmixed nuts (peanut, walnut, cashews, etc.)
4ozwholemeal bread
1/2ptveg stock or water
2tspyeast extract
1tspmixed herbs
seasoning(to taste)

Method

1.Chop onion, saute in the butter.
2.Grind nuts and bread together until fine.
3.Boil stock and yeast extract, mix in to make a fairly slack mix.
4.Turn into greased shallow dish, level top. Sprinkle with a few breadcrumbs.
5.Bake 180°C for 30 mins.

Tips

Variations:

  1. Nut Loaf with cheese & avocado layer: Make as basic recipe but only add 3-4 tbs of stock to give firmer mixture. Grease 1lb loaf tin. Put in half the mix. Cover with 2 sliced tomatoes & 2 oz grated cheese. Top with remaining mixture. Bake as above. Leave to cool in tin. Remove carefully. Wrap in cling film or greaseproof. Put in fridge. Cut in slices.
  2. Rissoles: Basic mix but shape into 6 "cakes". Coat with wholemeal breadcrumbs. Fry in shallow oil 3-4 mins each side. Serve hot or cold.
  3. Cottage pie: Basic mix but add enough stock to give loose texture.
