Ingredients
| 50 | g | dried apricots |
| 75 | g | dried figs |
| 50 | g | soft dried dates |
| 50 | g | dried cranberries |
| 50 | g | sultanas |
| 3 | tbsp | brandy |
| 200 | g | soft butter |
| 200 | g | caster sugar |
| 100 | g | plain flour |
| 75 | g | ground almonds |
| 4 | large | eggs(beaten) |
| 1 | large | orange(zest and juice) |
Method
1.Whiz the dried fruit briefly in a food processor until the size of candied peel. Soak the fruit in the brandy for at least an hour.
2.Preheat oven to 150°C.
3.Beat butter and sugar together until white & fluffy.
4.Slowly beat in the eggs, one at a time.
5.Gently add the almonds & flour together, a hand at a time.
6.Slowly fold in the fruit zest & juice taking care not to over mix.
7.Transfer mix to lined cake tin (20cm loose-bottomed springform tin).
8.Smooth the top and bake for 1 hour or until the cake comes out clean.
9.You can dust with icing sugar to decorate if you feel like it!
