Chocolate Frosted Brownies

Ingredients

75gself-raising flour
15gcocoa powder
1pinchsalt
50gbutter
175gsoft brown sugar
1tablespoonwater
100gplain chocolate(chopped in pieces)
1/2teaspoonvanilla essence
2eggs
25gchopped walnuts
100gplain chocolate(for the frosting)
1x 150ml cartonsoured cream

Method

1.Heat the oven to 160°C (325°F or gas no. 3). Butter a 20cm (8in) square baking tin and line it with a strip of greaseproof paper, cut to the width of the base and long enough to overlap the opposite ends.
2.Sift the flour, cocoa powder and salt onto a plate.
3.Put the butter, sugar and water into a medium saucepan and stir over low heat to melt the butter—do not boil.
4.Draw off the heat and add the chocolate pieces and vanilla essence. Stir as the chocolate melts—the heat of the pan should be sufficient to do this.
5.Beat in the eggs, one at a time.
6.Then add the sifted dry ingredients and beat to a smooth, shiny batter.
7.Finally stir in the walnuts.
8.Pour the mixture into the prepared tin. Set in the heated oven and bake for 20 minutes.
9.Let brownies cool in the tin, then remove the greaseproof paper.
