
Chai Cheesecake (Lucy McMullen / Donna Hay)

Ingredients
| 2 | packs | gingernut biscuits |
| 1/2 | cup | almond meal |
| 100 | g | melted butter |
| 660 | g | cream cheese |
| 160 | g | sour cream |
| 1 | cup | brown sugar |
| 1 | tsp | vanilla paste |
| 1/2 | tsp | mixed spice |
| 2 | tsp | cinnamon |
| 1 1/2 | tsp | ground ginger |
| 4 | eggs | |
| cinnamon(for dusting) |
Method
1.Process 2 packs of gingernut biscuits and 1/2 cup almond meal in a food processor. Add 100g melted butter and press into the base of a springform pan. Refrigerate.
2.Place 660g cream cheese, 160g sour cream, and the spice mix in a mixer and blend until smooth.
3.Add 1 cup brown sugar, 1 tsp vanilla paste, 1/2 tsp mixed spice, 2 tsp cinnamon, 1 1/2 tsp ground ginger and process until combined and sugar is dissolved.
4.Beat in 4 eggs.
5.Bake for approximately 50 minutes at 150°C. Dust with cinnamon.
