Ingredients

2onions(chopped)
500gcarrots(peeled and chopped)
50gbutter
salt and pepper
1litrestock(chicken or vegetable)
fresh coriander(optional addition)

Method

1.Sweat onions and carrots in butter for 15 minutes.
2.Add the stock and simmer on low heat for 20 minutes until the vegetables are soft.
3.Blend, purée, or liquidise until smooth.
