
Baked Vacherin

Ingredients
| 1 | medium-ripe | Vacherin Mont d'Or(approx 500g) |
| 1 | small | garlic clove(cut into wafer thin slices) |
| 1 | tsp | tiny soft thyme sprigs |
| 1 | heaped tsp | crabapple or redcurrant jelly(plus extra for serving) |
| dash | Kirsch(optional) | |
| freshly ground black pepper | ||
| crusty baguette(to serve) |
Method
1.Preheat oven to 200°C, Gas 6.
2.Remove all the wrapping but leave the cheese in the box.
3.Using a small sharp knife make slashes all over the top and push a garlic slice into each cut together with the thyme and jelly.
4.Sprinkle the top of the cheese with black pepper.
5.Place the lid on the box and wrap in foil.
6.Place on a baking sheet and bake for 20-25 minutes until the cheese has melted and is just beginning to ooze.
7.Bring straight to the table and add the Kirsch if using.
8.Serve with the extra jelly and dip in chunks of baguette.
